Because I consider myself as an “Informer Blogger”, I love supporting women in their businesses, and today I am highlighting Rebecca Quesada, Owner of Bex Bakes Gluten-Free. She has some amazing cookies (GF – vegan and paleo) that she bakes herself in her small California kitchen. I met Rebecca at the ShiftCon Eco-Wellness Blogger’s Conference back in Oct 2014 in California where I tasted just about every one of her cookies and brownies that she had out for sampling…so I already know how delicious they are!
Rebecca or “Bex” a nickname given to her by her family growing up is a mother, artist, holistic baker and good food advocate. Diagnosed with a rare skin disease in her 20’s, she became another medical human guinea pig. It wasn’t until she was in her late 30’s that she followed through on her thoughts and did something about her diet. She went Gluten Free. As a trained Pastry chef, she has been Gluten Free for over 3 years and she felt that although she has made dietary changes that she shouldn’t have to give up on taste. Instead of focusing on what she can’t have, she likes to focus on what she can. Bex Bakes is Gluten Free as a base, however there are many products that are also Paleo and Vegan because she would like to encourage other people to join her on her journey towards better health and she believes there isn’t one way, there is just the right way for you.
