In the summer months I like to keep things simple in the kitchen. It gets really hot here in north Texas and I certainly don’t want to make it worse by turning on the oven if I don’t have to. So keeping with our healthy lifestyle, my husband and I prepare lots of simple salads with fresh vegetables and fruits. He will also grill outdoors as much as possible. My motto is healthy living healthy eating…and making it simple is a bonus!!
Last night for dinner I made this yummy nutritious spinach and strawberry salad to go along with fresh grilled meat my husband made. It’s such a simple way to make sure my family gets the healthy nutrition that we strive for, plus it’s one of two leafy greens my 6-year-old will eat. Getting my child to eat healthy is such a major thing, so I prefer to fix foods I know he will eat. So we have fresh spinach a lot!!
Spinach Strawberry Salad
- a big bowl of spinach
- 10 strawberries (sliced)
- 1/3 to 1/2 cup feta cheese
- handful walnuts
Add spinach to large bowl, add sliced strawberries, sprinkle feta cheese and top with walnuts! Simple, uh?
Speaking of spinach…I personally have been eating fresh spinach for quite some time now and I know the nutritional value it has, but I learn a little more about this super leafy green in Sam’s Club’s online magazine, Healthy Living Made Simple (HLMS). Have you a chance to read it? It’s one of my go to places for all my family’s health and wellness needs. I like reading its nutritional information which I can put to use in my daily life. HLMS has named spinach as its spotlight superfood for the months of July and August and has an article on its nutritional benefits, its vitamin count for 1 cup size, as well as a few healthy recipes. It made me fall in love with fresh spinach all over again. I truly can (and do) eat spinach by the handfuls when I want/need something to munch on. The Sam’s Club we go to in Denton, TX always has the freshest produce, and plenty of fresh and frozen meats to choose from, plus the best salmon I’ve ever had. We look forward to shopping there and my husband & son thoroughly enjoys taste testing their food samples. You can find everything you need in bulk, and of course, buying in bulk saves you money. There’s only three of us, but because we eat at home most of the time we buy in bulk and freeze what we won’t eat in the next week. It’s easy to shop for healthy items in bulk at Sam’s Club because they know it’s important to their members, so they want to deliver what their members shop for on a daily basis.
