My mom at work making herb plants for me to take home. She loves to grow fresh herbs to use in her tea, but her favorite thing to do with the herbs she grows is to give them all away to her daughters, neighbors and friends. Here’s a couple of ideas I have for mine. Thanks mom!!

- 3 cups chopped watermelon (seedless)
- 1 small red onion, thinly sliced
- 3 tbsp. red wine vinegar
- juice of 1 lemon
- 1 tsp. of salt
- 2 tbsp chopped mint leaves
- freshly ground pepper to taste
Combine watermelon and onions in a large bowl. Add vinegar, lemon juice, mint, and salt. Mix to incorporate all ingredients and add fresh black pepper to taste. Cover watermelon salad and refrigerate for an hour.
Be certain to juice mint leaves and in other leaf in between a hardy fruit or vegetable such as a beet or an apple – leaves tend to drag the motor on the juicer a little. In this juice or any other juice you make at home, you may add more mint. I like mint, but not too much of it in my juices. Quinoa Mint Salad
- 1 cup Quinoa
- 1 tomato, chopped
- 1 cucumber, chopped
- 1 small red onion, chopped
- 2 tablespoons mint, finely chopped
- 1/2 cup olive oil
- 1/4 cup fresh squeezed lemon juice
- Salt and pepper to taste
To cook Quinoa:
If you want, rinse quinoa in a fine sieve until water runs clear and drain. I read where this gives the quinoa a better taste. I don’t always do this part b/c I like the taste. In a medium pot add quinoa and 2 cups water; bring to a boil.
Reduce heat to medium low and mix in lemon juice, oil, salt, and pepper. Cover and simmer until water is absorbed o about 15 to 20 minutes. Take off the heat and let cool for 5 minutes or so, then fluff with a fork and combine the rest of ingredients. Enjoy this delicious and healthy salad. A perfect side dish to any summer meal!
**I have enjoyed this dish for three days now and I can attest to it being better than the day before!
Mint Yogurt Veggie Dip
- 1/2 cup yogurt
- 1 to 2 teaspoons lemon juice
- 1clove garlic, minced
- 1/4 cup fresh dried mint leaves, finely chopped
- Salt and pepper to taste
Mix all together.
Make ahead of time. The longer it sets the better the taste will be! Great as a salad dressing too.
Mint Orange Ice Tea
Brew your tea with a few mint leaves, pour over ice and add 1 drop of Orange Essential Oil & a couple of orange slices & sprigs of mint and enjoy this awesome flavored tea. Please note: Only 1 drop of EO is all you need!!

- Boil with sugar and water to make mint syrup to sweeten drinks
- As a garnish for summer drinks like lemonade
- Chew after meals for an instant breath freshener
- Add to green smoothies
- Chop and toss with roasted potatoes, olive oil and salt
- Frozen in ice cubes for a pretty drink presentation
- Make mojitos
- Add to salads
- In a refreshing bath — put fresh or dried leaves in a drawstring bag or bundle some stems with rubber bands
- Dried or frozen (lay flat dry leaves on a cookie sheet, flash freeze and pack in containers) for later uses
- Add to the water used to steam vegetables
- Blend with lemon juice, vinegar and a light oil for salad dressing
- Mix with olive oil for a marinade for the grill
- As mouthwash — steep 4 TBS of chopped fresh mint leaves in 1 quart of boiling water, chill, then strain and keep in the refrigerator
- Add to soups and stews
- Mint jelly
- Simmer in homemade hot chocolate
- Chop and add to salsa
