Inspired by a new friend of mine, I made this delicious pizza crust. A little costly, I’ll say, but it will be a good healthy gluten-free pizza crust you’ll ever make.
Healthiest Gluten-free Pizza Crust Ever!
I’ve used the best ingredients to make this pizza crust that I could find. Of course, all ingredients can be tailored to what you have on hand or want to buy.
First, let me tell you where I got my inspiration to make the pizza crust – her name is Loralee. I met this lady earlier this year when we went to New Mexico for a wedding. We immediately bonded because we both like to eat healthily and are always on the lookout for what’s good for us to consume.
About two years ago, Loralee and her husband decided (or perhaps, she decided) it was time to do something about their unhealthy eating habits. After researching several topics, they started intermittent fasting (IF). Not only that, but they also stopped eating foods that contain lectins. Dr. Gundry inspired Loralee to go in that direction. Long story short, both she and her husband are healthier than they’ve ever been. She shared her knowledge of IF and what lectins were. I was very intrigued about IF and decided to do it too. She is an inspiration to me.
During our stay in New Mexico with our friends, we had pizza night where Loralee made the pizza crust and everyone added their toppings to their pizzas for everyone to share. Loralee also made this special gluten-free pizza for anyone who wanted to try it.
I copied her recipe with what I had on hand (except the cheese) with one addition – hemp seed hearts.

PS. I bought my cheese in the specialty area of Kroger. Loralee told me that in order to buy cheese with no casein 1, it has to be either goat cheese or cheese from France or Italy which is located in the specialty cheese section.
Gluten-free Pizza Crust with Hemp Seed Hearts
Just a little kneading, and you'll have a wonderful gluten-free pizza crust with better-for-you ingredients
- 1-1/2 cups cheese (cut in small pieces) for healthier consumption use cheese with no casein 1
- 2 oz organic cream cheese
- 1 large egg
- 1/2 cup + 2 tbl gluten-free flour
- 1/4 cup hemp seed hearts
Preheat oven to 425 degrees
Microwave cheese and cream cheese for 30 seconds. Mix, then repeat one more time.
Add egg, gluten-free flour, and hemp seed to melted cheeses.
Knead by hand
Roll dough in a 10-inch circle
Invert pizza dough onto a cookie sheet
Bake for 15 minutes. Remove from oven.
Add toppings and bake 7 more minutes.
